[JOT] Mom's Foolproof Rice Cooker Oatmeal: 4 Days of Delicious Breakfast in Minutes!
Hi Readers,
Unpopular opinion, overnight oats are healthy but they taste terrible. Here’s a yummy alternative that takes less time and effort, my Mom’s Foolproof Rice Cooker Oatmeal.
Here's what you'll need:
Rice cooker or instant pot
2 cups rolled oats (or steel cut for a chewier texture)
Water (follow your appliance's instructions)
1 Tbsp flax seeds (for added Omega-3s and fiber!)
1 generous handful of nuts (Pine nuts are my mom’s favorite, but I sometimes experiment with walnuts. Pistachios turn out mushy, so I wouldn’t recommend those.)
Pinch of salt
Optional:
1/4-inch fresh ginger or
A dash of cinnamon or
A dash of cardamon
Instructions:
Put all ingredients in the rice cooker.
Press the "oatmeal" button.
Go do something else while oatmeal cooks. (approximately 60 min)
Portion it out into containers for the week. This recipe makes enough for 4 days, but if you have a bigger model, you can modify it to cover the whole week.
Reheating is a breeze: microwave individual portions for 1 minute with a splash of water. Want it creamier? Add hot water until you reach your desired consistency.
